WHere is a home-style version of a drink found on the seasonal menu. It's a batch prepared mix that is bursting with flavours associated with festive period, making it ideal for your festive gathering. Any leftover syrup for brunch beverages, desserts, or to make additional servings of bikinis.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Cocktail (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
Making the Syrup: Place all the components in a saucepan, bring to a simmer, agitating until the sugar dissolves. Then, remove from the heat and leave to reach room temperature completely. Pour into a sealable bottle, cap it and store chilled, where it will keep for about four weeks.
For the Cocktail Base: Mix all the liquid ingredients into one sizeable container, leave to sit for one hour, then pass it through preferably using muslin, to ensure it's fully clarified.
For serving: Pour 85ml of the premix into a cocktail shaker packed with ice, and agitate carefully for one minute until cold. Pour into an frosted cocktail glass or equivalent, garnish with some cranberries and complete it using a quick spritz of mandarin oil above the glass.
